Courgettes are a delicious summer squash and full of Vitamin C. On Wednesday this week, Emma Hedge enlisted the star bakers in Dragonflies to help her bake the most mouth watering courgette cakes. The 2-3 year olds were put to task to help slice, grate, mix and scoop the ingredients in order to bake these delicious little cakes. Initially the children recognised the courgettes as cucumbers. Emma discussed the similarities with the children and there was a discussion about other green fruit and vegetables and how they are good for your body. The children sliced the courgettes independently using children's safety knives. They mixed the ingredients and did really well using the spoons to direct the mixture into the cases.
